Is it possible to change the colour of my cherry red accoustic guitar back to its natural maple finish?

its a gibson ec10,would it be feasible for a refinisher to strip the laquer down to the natural wood and re varnish it, would it be expensive?

It’s possible. However, I think and you would have to completely remove neck and strings from body and retune. If you do it yourself it would be tedious but not very expensive.
A professional carpenter or woodworker would do a much better job and may be worth paying for. If you have removed the neck and string, I can’t see this being that expensive. He would remove existing coat, sand to smooth, and varnish with a clear coat.
